History/Company Profile:
Louis M. Pappamichalopoulos came to the country in 1904 from Greece
and for obvious reasons changed his name to Pappas. During World War
I he created his own version of a Greek salad by adding potato salad
in order to sustain the troops during hard times. In 1925 he and his
wife, Flora established the original “Riverside Café”
in Tarpon Springs with a handful of employees and a sawdust floor.
They specialized in fine Greek-American cuisine and Louis Pappas Greek
salad. Potato salad at the bottom of a Greek salad itself became internationally
known. Due to tremendous popularity the family opened several restaurants
in the Tampa Bay area. The eventually combined their efforts under
one roof in Tarpon Springs where Louis Pappas Riverside Restaurant
remained a landmark from 1975 until 2002 at which time it was sold.
Grandson Louis Lucas Pappas remains committed to continuing over 80
years of Pappas tradition with his fast casual concept, Louis Pappas
Market Café. Louis Pappas Market Café caters to the
busy lifestyle of today’s customers on the go. They can whip
up great food fast in an upscale yet casual atmosphere. The relaxed
open style kitchen and counter service layout combines the convenience
of fast food with the opportunity for high quality meals usually found
at full service restaurants.
