History/Company Profile:
RARE was founded by George McKerrow, Jr. in 1981 with the opening
of the first LongHorn Steakhouse Restaurant on Peachtree Road in Atlanta.
The company, formally known as LongHorn Steaks, Inc., went public
in 1992, and in 1996 acquired Bugaboo Creek Steak House, Inc., a company
which included The Capital Grille and Bugaboo Creek Steak House concepts,
specializing in dry-aged steaks, The Capital Grille is known for classic
steak house cuisine, an award-winning wine selection, premiere private
dining, personalized service and architectural excellence.
Menu:
The Capital Grille serves traditional, hearty steak house fare. Nationally
acclaimed for dry aging beef on premises, The Capital Grille raises
steaks to a level of excellence. In state-of-the-art meat lockers,
short loins of beef are naturally dry-aged for 14 days in a temperature
and humidity controlled environment. Steaks are hand-cut daily, well
seasoned and grilled to desired temperature. The result is an extraordinarily
flavorful and tender steak. Variety is another distinguishing factor
of The Capital Grille's menu. Accounting for tastes and appetites,
The Capital Grille offers a selection of chilled seafood appetizers
such as blue point oysters, cherrystones, jumbo shrimp cocktail, and
cold baby lobsters. Grilled seafood entrées include Norwegian
Salmon, Fresh Swordfish, Tuna Steak and Large North Atlantic Lobsters.
The Capital Grille serves lunch in eight of eleven locations, offering
classic sandwiches, unique entrée salads and lunch entrées
with side dish pairings. The Capital Grille's eye for detail shines
through with mouth watering house-made desserts. Offering signature
Strawberries Capital Grille with a sauce of port wine and Grand Marnier,
Classic Crème Brulee and an innovative deep dish Key Lime Pie
garnished with toasted pistachios. The Capital Grille dessert menu
will tempt any guest.
